Day 1: Fishing and Culinary Skills

Morning

Begin your day by the river's edge, our expert  will introduce you to the art of fly fishing. Learn the fundamentals of casting and connect with the serene rhythms of the water. Our approach is simple and sustainable: catch what you need, and let the rest swim free.

Afternoon

Transition to the kitchen, where you'll focus on practical skills—knife skills. Master the precision required for cooking as you prepare, fillet, and cook trout. Chef Lionel will guide you through classic dishes like Trout en Croute, Thai Fish Cakes, and Lemon & Parsley Beurre Blanc, all showcasing the day's catch.

Day 2: Hunting and Culinary Mastery

Morning Session

In the morning, you have two options. Choose between stalking for deer, rabbits, and pigeons, all done responsibly and in harmony with nature. Alternatively, opt for the excitement of clay pigeon shooting, where accuracy meets the thrill of the shot.

Afternoon Session

The afternoon brings a focus on seasonal game birds. Perfect your knife skills as you prepare, butcher, and cook pheasant, grouse, partridge, mallard, or rabbit. Each dish represents a celebration of the season's offerings, with sustainability and responsible sourcing at its core.

 

Throughout these two days, our ethos remains straightforward: respect for nature, sustainable practices, and a hands-on approach to sourcing and cooking.
